Whole Wheat Pancake
Why is it an iHealthU recipe? These yummy alternative pancakes are high in fiber thanks to whole wheat, flaxseeds and sunflower seeds. Its also an excellent source of vitamin E, antioxidants, and Omega-3 fatty acids.

Ingredients
  • 1 cup whole wheat flour
  • 1 egg
  • 1 cup milk
  • 1/3 cup powdered sugar / Castor sugar
  • 1/2 tsp baking powder
  • 2 tsp flaxseeds
  • 2 tsp sunflower seeds
  • 1 tsp olive oil to grease the pan
  • Honey to serve.
Method
  • In handheld mixer or a blender - beat the egg, milk and sugar till will mixed.
  • Add the cup of flour - blend till no lumps remain.
  • Add the baking soda and blend one last time.
  • Heat a nonstick pan - dab little a bit of oil with the back of your spatula.
  • Pour half a cup of the batter onto the pan - it will spread into a small circle. Don't worry of its out of shape though.
  • Sprinkle a few flaxseeds and sunflower seeds.
  • When small bubbles start appearing on the pancakes surface - flip the pancake with the spatula.
  • Cook the other side for 20-30 secs or till browned and then take it off the pan.
  • Repeat with the rest of the batter - This will make 4 - 5 pancakes depending on the size.
  • Serve with hot with a little honey poured on top.
