Ingredients
1 cup whole wheat flour
1/2 cup wheat bran
1 tsp baking powder
1 cup olive oil
1 cup brown sugar
1 cup milk
2 eggs
1 tsp vanilla essence OR 1/2 tsp cinnamon powder
1 tsp flaxseeds
Muffin tins or a Muffin Pan
Cupcake Paper cups (Optional)
Method
Preheat your Oven to 170 Degree Centigrade.
Mix the Dry ingredients (flour, bran, baking powder) in a bowl and keep aside.
Beat together the eggs, milk, sugar, and olive oil till mixed in.
Add Vanilla or Cinnamon to the wet mixture.
Fold in the dry mixture into the wet - fold slowly till there are no lumps - take care not to mix too much.
Fold in the flaxseeds.
Divide the mixture into greased muffin-pans. You can also use cupcake paper.
Makes about 10 to 12 muffins.
Bake for 20 to 30 mins - test doneness with a toothpick.
Take the pan out of the oven, let them cool before popping them out.
