Whole Wheat Muffins

Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup wheat bran
  • 1 tsp baking powder
  • 1 cup olive oil
  • 1 cup brown sugar
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla essence OR 1/2 tsp cinnamon powder
  • 1 tsp flaxseeds
  • Muffin tins or a Muffin Pan
  • Cupcake Paper cups (Optional)
Method
  • Preheat your Oven to 170 Degree Centigrade.
  • Mix the Dry ingredients (flour, bran, baking powder) in a bowl and keep aside.
  • Beat together the eggs, milk, sugar, and olive oil till mixed in.
  • Add Vanilla or Cinnamon to the wet mixture.
  • Fold in the dry mixture into the wet - fold slowly till there are no lumps - take care not to mix too much.
  • Fold in the flaxseeds.
  • Divide the mixture into greased muffin-pans. You can also use cupcake paper.
  • Makes about 10 to 12 muffins.
  • Bake for 20 to 30 mins - test doneness with a toothpick.
  • Take the pan out of the oven, let them cool before popping them out.
