4 and 1/3 cup watermelon
1 cup sugar (or equal amount natural substitute)
2 Tbsp lemon juice
2 Tbsp rum, wine or suitable liqueur (optional)
Puree watermelon in a blender after removing seeds
Add sugar and lemon juice, combining all ingredients. Blend until sugar dissolves
Freeze after pouring into a covered container When it is semi-solid, mash it up with a fork and re-freeze
Repeat when frozen Put contents in a blender again and process until smooth Cover and re-freeze until you serve it
Serve a scoop or two garnished with a mint leaf
