Pumpkin Soup

  • 250 gm pumpkin, sliced
  • 1 small boiled potato
  • 1/4 onion, sliced
  • 1 clove
  • 1 small piece ginger
  • 2 tbsp coconut milk
  • 1/2 cup water
  • 1/2 tsp butter
  • Salt
  • Black salt
  • Jeera powder
  • Method
  • Heat butter in a vessel, add the cloves, and saute for a minute.
  • Then add onion and saute till it becomes translucent.
  • Add pumpkin slices and saute with little salt till soft.
  • Add the boiled potato and saute.
  • Let it cool. Grind it in mixer with water.
  • Transfer it into a vessel and boil it.
  • Add black salt, roasted cumin powder and coconut milk and don't boil further.
  • Turn off the gas and make sure the consistency is thick.
  • Serve with chopped coriander leaves.
