Lemon Coriander Soup
Calories - 120 kcal per serving

A healthy, filling, and aromatic soup great for a sore throat.
2 tbsp chopped coriander leaves
1/2 cup sweet corn
2 cups vegetable stock
2 tbsp chopped Lemon grass roots
1/2 inch ginger, chopped
Salt to taste
1 tbsp oats powder
1/2 tsp vinegar
Heat vegetable stock in a deep nonstick pan. Chop lemon grass root, add along with ginger and let it boil for 3-4 minutes.
Blend the corn for a few seconds to have a grainy coarse paste
Take the lemon grass root, ginger out of the pan. Add sweet corn and mix well. Add salt and mix.
Add oats powder and mix well and cook till the soup thicken a bit.
Add coriander leaves and vinegar and mix well. Squeeze the juice of the lemons and mix.
Serve piping hot.
