Lemon Coriander Soup

  • 1 lemon
  • 2 tbsp chopped coriander leaves
  • 1/2 cup sweet corn
  • 2 cups vegetable stock
  • 2 tbsp chopped Lemon grass roots
  • 1/2 inch ginger, chopped
  • Salt to taste
  • 1 tbsp oats powder
  • 1/2 tsp vinegar
  • Method
  • Heat vegetable stock in a deep nonstick pan. Chop lemon grass root, add along with ginger and let it boil for 3-4 minutes.
  • Blend the corn for a few seconds to have a grainy coarse paste
  • Take the lemon grass root, ginger out of the pan. Add sweet corn and mix well. Add salt and mix.
  • Add oats powder and mix well and cook till the soup thicken a bit.
  • Add coriander leaves and vinegar and mix well. Squeeze the juice of the lemons and mix.
  • Serve piping hot.
