Doodhi kheer

  • 250 ml slim milk
  • 125 gm doodhi, deseeded and grated
  • Stevia, as needed
  • 1 tsp ghee
  • A pinch of elaichi powder
  • 2-3 almonds chopped
  • 2-3 cashews chopped
  • 6-8 raisins
  • Method
  • Boil milk on slow flame till it is slightly reduced.
  • Squeeze the grated doodhi to remove all the water.
  • In a pan, heat ghee and saute the grated doodhi till it turns slightly brown.
  • Now add boiled milk and mix well. Add dry fruits and cook on medium to slow flame. Simmer for 8-10 minutes with continuous stirring.
  • Add stevia, elaichi powder and simmer for another 2-3 minutes. Make sure the kheer reaches its consistency.
  • Serve hot.
